Gluten free doesn't mean that it won't taste good.... with this recipe, I guarantee that nobody would know the difference!!!! It exceeded all expectations and it's a fantastic French Vanilla Banana, Blueberry Loaf Cake but then when you add French Vanilla and cinnamon sugar on top it just blows any other recipe that I have tried out of the water. The best part for me is that it’s gluten free so my son-in-law can enjoy it too when he comes to visit!!!
How to make:
3 medium ripened bananas mashed
1/4 brown sugar
1/2 Javamelts French Vanilla Sugar (feel free to use any of our 4 delicious gourmet flavors) **and an additional 1 tbs set aside for top)
1/3 c coconut oil melted
2 eggs room temperature
2 tsp vanilla extract
1 tsp cinnamon **and an additional 1/4 tsp set aside for top)
1 1/2 c gluten free flour
1 tsp baking soda
1/4 tsp salt
1/2 to 1/3 cup blueberries
Combine mashed bananas, all sugar, melted oil, eggs and vanilla in mixer - mix until combined completely
Add sifted dry ingredients and mix well
Fold In blueberries
Pour into a lined loaf tin
Bake for 50-55 min at 350 degrees until fork ready
Top with 1/4 tsp of cinnamon and 1 tbs of Javamelts French Vanilla Sugar
Let cool and slice
