Ingredients:
1 lb spare ribs
1 star anise
3 ginger slices
4 scallions
For Sauce:
2 TBSP cooking oil
2 TBSP Caramel Javamelts
2 TBSP cooking wine
2 TBSP light soy sauce
3 TBSP black vinegar
1 cup of warm water
Preparation:
Cut ribs into 1.5 sections. Place in boiling water and blanch for 2-3 mins. Transfer out and rinse under warm water. Set aside to drain.
Add 2 TBS cooking oil and add the Caramel Javamelts in a wok evenly over the low heat. Don't stir sugar, just shake occasionally.
Once the sugar has caramelized and turned golden, turn heat up to medium and stir in ribs.
Drizzle with soy sauce, cooking wine and black vinegar. Toss and coat well. Continue to cook for 1 min.
Add enough warm water to cover pork ribs and bring to a boil. Once boiling add ginger, scallions and star anise.
Cover and simmer for 20-25 mins on low until pork is tender, stir once or twice. Take ginger, scallions and star anise out towards the end.
Uncover and cook in medium heat to reduce sauce until it thickens and becomes sticky enough to coat ribs. Serve and Enjoy!
