THIS IS MY NEW OBSESSION!
Dutch Baby Pancakes are fun to make using all different flavors and items to stuff them with.
Ingredients:
1/2 C whole milk or 2%
1/2 C flour
2 eggs
1 tsp vanilla
2 or 3 Tbs of Javamelts Flavored Sugar of Choice - we used French Vanilla first and it did not disappoint
2 tbs butter (set aside)
Preparation:
Place all ingredients into a blender and blend for 10 seconds. Scrape any of the flour that might have clumped and blend again for another 10 seconds so that the batter is nicely mixed.
Place that batter into a glass measuring cup so that you can measure how much 1/2 is. **my mother-in-law suggested this and it works perfectly! :)
Let the mixture rest for 20 minutes
While the mixture if resting, preheat the oven to 425 and place an oven ready skillet (I use my cast iron skillet) into the oven
After the 20 minutes, remove the skillet from the oven, place 1 tbs of butter and melt and distribute it well.
Pour half of the batter into the skillet and make sure it's distributed nicely and place that into the oven and bake for 15 min.
You will see the golden brown sides and bubbly center too. Once this happens, remove it from the oven and place on a plate.
Top with any toppings you want and either cut it like a pizza pie or I cut it in half, stuff both pieces in the center with ice cream, flavored homemade whipped cream, fresh berries tossed in Javamelts, etc. and then fold the sides up so it makes a triangle and eat it like an ice cream sandwich or puffed pastry!
Repeat the above with the second portion of the batter. For smaller cast iron skillets, you will be able to yield 3 full Dutch Baby Pancakes.
