Javamelts Caramel Carrot Coffee Cake

This is one of my Fall and holiday favorites to make!  This recipe is guaranteed to WOW your taste buds and guests too!  It's the perfect combination of flavor and spice..... enjoy with your favorite cup of coffee and tea and maybe add a little Javamelts to that too of course.  

 Ingredients for cake-9 servings

2 cups 1.1 GF flour

1 tbsp baking powder

1 egg

2 cups carrots, finely grated

1 cup Javamelts Caramel Flavored Sugar

4 tbsp butter, room temp

1 1/2 tsp vanilla extract

2 tsp cinnamon

1/4 tsp allspice

1/2 tsp kosher salt

1/4 tsp nutmeg

1/3 cup milk

1 orange zested

Streusel Topping

1/2 cup Javamelts Caramel Flavored Sugar

3/4 cup 1.1 GF flour

pinch of salt

5 tbsp butter, room temp

1 cup walnuts, chopped

1/2 tsp cinnamon

Preheat the oven to 375 degrees. Spray a 7x10, 9” sq or 9” round cake

pan with nonstick baking spray. In a bowl add all of the wet

ingredients, zest and the sugar. Mix on high for 3 minutes. Add the

dry ingredients and mix until just incorporated. Pour into the baking

dish. Add all of the streusel ingredients in a bowl and mix until

large crumbs, Sprinkle on top of the cake and bake for 45-60 minutes

or until a toothpick comes out clean. Remove and top with glaze.

Ingredients for glaze

1 cup powdered sugar

3 tbsp cream cheese

1 tbsp milk

1 tsp vanilla extract

Mix everything together and drizzle on top.

Enjoy!!
