Gluten-Free Caramel Blueberry Muffins
Dry ingredients:
1 1/2 cups almond flour
1/2 cup @kingarthurbaking gluten free flour
1/2 cup @kos blueberry muffin protein powder
1/2 cup Javamelts Caramel Flavored Sugar
1 tbsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
-Preheat oven to 375°F
-Whisk together in a large bowl, set aside
Wet ingredients:
3/4 cup plant milk
1/4 cup lemon juice
1/2 cup plant butter, melted
1/2 tsp Valencia lemon peel
1 tsp vanilla extract
-Whisk everything together
-Pour into dry ingredients, mix until combined
-Add 1 1/2 cups frozen blueberries
-Mix until just combined
-Using an ice cream scoop, divide the batter into lined muffin pan
-Add a few extra blueberries on top of each muffin and sprinkle with a little Caramel sugar
-Bake for 10 min, then reduce heat to 350°F and bake for another 20 min
