A great recipe is one that usually has it all..... well, if you are a person who is tired of the same old thing and you want great taste and a healthy treat option, this is the recipe for you! This recipe can be made gluten free or regular and it's sure to be a crowd pleaser.
Dry ingredients:
- 3/4 cup almond flour
- 1/2 cup oat flour
- 1/2 cup @kos vegan vanilla protein
- 1/4 cup tapioca starch
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
-Whisk together, set aside
Wet ingredients:
- 3 ripe bananas, mashed
- 1/2 cup plant milk + 1/2 tbsp apple cider vinegar
- 1/3 cup plant butter
- 1/2 tbsp vanilla extract
- 2 tbsp ground flaxseed
- 1/3 cup Javamelts French Vanilla Flavored Sugar (can use any of our 4 flavors)
- 1 @hukitchen salty dark chocolate bar, chopped
-Mix together everything except chocolate
-Add dry ingredients to wet, mix until just combined
-Add chopped chocolate, fold in gently
-Using a small ice cream scoop for mini muffins, divvy batter into muffin liners
-Bake at 375°F for 8 min
-Reduce to 350°F and finish baking for 10-12 min
Makes 24 mini muffins, 6 servings (4 large muffins)
