Love is in the air with these amazing gluten-free pancakes!
2 cups oat flour
2 tsp baking powder
1/4 tsp salt
1-2 tbsp Javamelts Vanilla Sugar
1 oz freeze dried strawberries
1 1/2 cups plant milk+1 tbsp lemon juice
2 eggs
1/4 cup melted coconut oil or plant butter, allow to cool after melting
-Add strawberries to a blender and blend until powder forms
-In a medium bowl, whisk together milk, eggs, oil/butter and sugar
-In a large bowl, whisk together oat flour, baking powder, salt and strawberry powder
-Create a well in dry ingredients and add the wet ingredients
-Mix until combined, let batter sit 5-10 min to thicken
-Add 1/4 cup batter to a hot pan or pancake griddle (be sure to oil or butter pan)
-Cook until edges start to puff and flip (about 2-3 min)
-Cook another 2-3 min
-Top with strawberries and whipped oat cream
-Drizzle with maple coconut syrup
Syrup:
-In a microwave safe bowl, add 1/4 cup coconut butter, 2 tbsp maple syrup and 4 tbsp plant milk
-Microwave in 30 sec intervals, stirring in between until smooth
