This recipe immediately caught my eye and I had to make it. I was a little skeptical at first but I have to say, when I topped it off with vanilla ice cream sprinkled with a little Mocha Javamelts - WOW!
Preheat oven to 350
Combined 2 tbs melted coconut oil
2/3 c Javamelts Mocha Flavored Sugar (or any of our other 3 gourmet flavors)
2/3 c pumpkin purée
1 tsp vanilla
Mix well.
Add 1 egg
Add 2 c almond flour - I used @pamelasproducts
1/2 tsp pumpkin spice
1 tsp baking soda
Mix well.
Fold in 1/2 c dark chocolate chips
Place in an oven safe skillet (cast iron)
Top with more chocolate chips
Bake for 20-25 minutes
It should be golden brown and fork ready
Let cool a bit enjoy it with your favorite coffee, tea, top, it with some Vanilla Ice Cream sprinkled with Mocha Javamelts or Mocha Whipped Cream
(Recipe for whipped cream: 1/2 pint heavy cream, 1/4 c Javamelts Mocha Flavored Sugar, whip on high for one minute with a stand mixer (longer with a hand mixer until stiff peaks form)
I did find that this recipe even tastes better when it sits for a few hours.... the flavors will pop so don't be afraid to make it early in the day or the day before you might be ready to serve it.
