My son-in-law, Ryan’s, grandma, Geg, loves to bake and her zucchini has been growing beautifully in her garden so she made this delicious bread for us and I can’t stop eating it! Trust me, it’s a must have recipe!
Ingredients:
1 C Butter melted
2 C Caramel Javamelts ( I C regular, 1 C Javamelts)
2 tsp vanilla
4 eggs
3 C Flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
3 cups shredded zucchini
A handful or two of chopped pecans
Preheat oven to 350 degrees
Shred zucchini set aside
First measure and combined the above dry ingredients together, then measure and mix in wet ingredients and add the shredded zucchini last and mix well
Pour into two buttered loaf pans or one large Bundt pan
Bake approximately 1 hour until fork ready
