If anyone is a pancake lover like we are, this is a MUST TRY! It has the right amount of flavor, sweet and nutrition and the added bonus is it's gluten free. A non-gluten free option is always possible just by switching out the gluten-free flour for regular flour. *Many of you may not know this but my future son-in-law has celiac so we like to be able to make things that he can eat and enjoy too. The amazing part about gluten-free recipes is that they taste amazing and unless you knew that we made them gluten-free you would not be able to tell yourself!~
Blueberry Cobbler Pancakes
Protein pancakes:
•1/2 cup gluten free oats
•1/4 cup peanut butter blueberry protein
•1/4 cup blueberry cobbler peanut powder
1 tbs Javamelts Caramel Flavored Sugar
•1/2 tsp Ceylon cinnamon
•1/4 cup dairy free Greek yogurt
•1 tsp baking powder
•1/3 cup plant milk
•1 tsp vanilla extract
•1 egg or flax egg
-Mix all together until combined
-Let batter sit 10 min (super important)
-Cook pancakes in a pan or on a pancake griddle
-Yields 6-8 pancakes
Blueberry chia seed jam:
•1/2 cup frozen blueberries
•2 tbsp Caramel Flavored Sugar
•1/2 tbsp lemon juice
•1-2 tbsp black chia seeds
•1/4 cup water
•2 tsp tapioca flour+1 tbsp water
-Add everything except the tapioca flour mixture to a sauce pan
-Cook on med-high heat for 5-8 min until bubbling
-Mash blueberries down a good bit
-Add tapioca flour mixture and mix until it starts to thicken
