I don't know how to describe this granola other than it's ridiculous! It turned out so delicious and it was so easy to prepare! I am so happy to have another quick and nutritious breakfast option!
Yield: approximately 4 cups
Ingredients:
2 cups rolled oats
1/2 cup pitted chopped dates
1/2 cup chopped pecans
1/3 cup almond meal or flour
1/4 chia seeds
1/2 tsp baking powder
1/2 tsp Kosher salt
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1 cup creamy, natural and unsweetened peanut butter
1/2 cup Javamelts Flavored Sugar of choice
1/4 cup coconut oil or unsalted butter
Preparation:
Preheat oven to 275 degrees. Line a large baking sheet with parchment paper and set aside.
In a medium bowl, toss together oats, dates, pecans, almond meal or flour, chia seeds, baking powder, salt, cinnamon and nutmeg.
In a small saucepan, whisk together peanut butter, Javamelts Flavored Sugar, and coconut oil over low heat until warmed through and well combined.
Pour the peanut butter mixture over the oat mixture and toss to combine. Spread evenly on the lined baking sheet into a 1/2 inch layer. Place in the oven and bake for approximately 20-25 minutes or until lightly browned. Let cool and break into large chunks for serving. I actually store this in my freezer and it's a really nice nighttime snack too!!!! ENJOY!
