Gluten Free Coffee Cake never tasted so good!
Ingredients:
2 eggs
3 tbsp French vanilla @javamelts
1.5 tbsp maple syrup
2 tbsp + 2 tsp melted/cooled coconut oil
1 tsp vanilla
1 cup almond flour
1/4 cup tapioca flour
1/4 tsp cinnamon
3/4 tsp baking powder
1/4 tsp salt
Topping/middle
2 tbsp @javamelts French vanilla sugar
1.5 tbsp coconut oil melted/cooled
1 tsp cinnamon
1 pinch salt
Directions:
Preheat oven to 350.
Line loaf pan with parchment paper.
In bowl, whisk eggs, coconut oil, syrup, and vanilla.
In another bowl, mix both flours, cinnamon, salt, and baking powder,
Add to first bowl and combine, mix all ingredients.
Mix topping ingredients together.
Pour half of the batter into the pan, then 1/2 swirl half of the topping, then remaining batter, then swirl remaining topping.
Bake for 22 minutes until light golden brown
or toothpick comes out clean.
*I sprinkles one travel pack of @javamelts French vanilla sugar on top of the batter before baking.
