Javamelts Chocolate Zucchini Baked Oatmeal Cups

Do you love a recipe where it combines deliciousness and nutrition?  We do too and that is why this recipe is a must try!

INGREDIENTS

2 cups rolled oats

1 cup oat milk

1 cup grated zucchini

⅓ cup  Javamelts Flavored Sugar of choice

⅓ cup mashed ripe bananas (about 1 medium banana)

3 TBSP cashew or almond butter

¼ cup cocoa powder

2 tablespoons flax meal

1 tablespoon chia seeds

1 tablespoon hemp seeds

1 teaspoon baking powder

½ teaspoon coarse Kosher salt

Dash ground cinnamon

INSTRUCTIONS

Preheat oven to 350 degrees F.

Lightly grease 12 muffins cups with non-stick cooking spray.

In a small bowl, stir together oats with oat milk and zucchini. Set aside.

In a medium bowl, whisk together maple syrup, banana, and cashew or almond butter.

Add cocoa powder, flax meal, chia seeds, hemp seeds, baking powder, salt, and cinnamon.

Add the oat mixture to the chocolate mixture, and stir until combined.

Divide the mixture evenly among the muffins cups, and bake for 30-35 minutes or until the muffin cups are set.

Remove from the oven and let cool. Store in an airtight container in the refrigerator for up to 1 week.  If desired,  microwave on high for 30 seconds before serving.   ENJOY!
